Ingredients
Serves: 2-3
• 300g pasta of your choice
• 2 chicken breasts
• 1/2 onion, finely chopped
• 5 cloves garlic, minced
• 1 tbsp olive oil
• 2.5 tbsp tomato paste
• Your favorite chicken seasoning
• 1/2 cup milk
• 3/4 cup heavy cream
• 1/3 cup pasta water
• Salt & pepper, to taste
• Parmesan Reggiano, for garnish
Instructions
Step 1: Prepare the Chicken
Pound the chicken breasts to an even thickness for even cooking. Season both sides generously with your favorite seasoning.
Step 2: Cook the Chicken
Heat olive oil in a large pan over medium-high heat. Sear the chicken for about 2 minutes per side until golden brown. Remove from the pan and set aside.
Step 3: Cook the Pasta
Boil pasta in salted water until al dente. Reserve 1/3 cup of pasta water, then drain and set the pasta aside.
Step 4: Make the Rosé Sauce
In the same pan, sauté the onions and garlic until fragrant. Stir in the tomato paste and cook for about 30 seconds to enhance its flavor. Pour in the milk and heavy cream, stirring well. Let it simmer gently to develop the creamy rosé sauce.
Step 5: Combine Everything
Add the cooked rigatoni to the sauce along with the reserved pasta water. Stir well to coat the pasta evenly, adjusting the sauce thickness as needed.
Step 6: Season & Serve
Season with salt, pepper, and freshly grated Parmesan Reggiano. Slice the cooked chicken and place it on top of the pasta. Garnish with fresh parsley, if desired.
