
Cheesy Beef & Potato Skillet

Ingredients:
- 1 lb. Good Ranchers Ground Beef
- 3 Slices Good Ranchers Bacon
- 2 tbsp Butter
- 3 medium or 4 small Russet Potatoes, diced into small 1-inch cubes
- 2 cloves Garlic, minced
- ¼ cup Worcestershire Sauce
- 1 ½ cups Milk
- 1 cup Cheddar Cheese, shredded
- 1 tbsp Dry Mustard
- 1 tbsp Smoked Paprika
- 1 tbsp Garlic Powder
- 1 tsp Salt
- 1 tsp Pepper
- Parsley, chopped
Instructions:
- Using kitchen scissors, cut the bacon into small strips and place in a 12-inch cast iron skillet on medium high heat. Cook until browned, then remove and place on a paper towel lined plate.
- In the skillet, still on medium high heat, add the ground beef and brown until cooked thoroughly. Remove the ground beef, drain any excess fat from the skillet, and set the browned beef aside in a bowl while the potatoes cook.
- Lower the heat of the skillet to medium low, melt the butter and then add the potato cubes. Stir often as the potatoes begin to brown in the butter, about 5 minutes.
- Next, add the minced garlic and stir for another two minutes, being careful that the garlic does not burn.
- Turn the heat to low and add the ground beef, Worcestershire sauce, milk, dry mustard, smoked paprika, garlic powder, salt and pepper, and ½ of the cheddar cheese. Stir to combine all ingredients.
- Place a lid on the mixture and cook on medium heat for 15-20 minutes, stirring occasionally to make sure the potatoes don’t stick to the skillet.
- When the potatoes are fork soft, top the mixture with the rest of the cheddar choose and broil on high until the cheese is melted and bubbly.
- Garnish with chopped parsley and enjoy!
