Ricotta Cheese Pasta Filling

 

Ingredients:

 

2 ½ cups ricotta cheese

1 tablespoon parsley (fresh or dried)

1 large egg

½ teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon salt

¾ cup grated Parmesan cheese

 

Instructions:

1. In a large mixing bowl, combine ricotta cheese, parsley, and egg.

2. Add onion powder, garlic powder, black pepper, and salt. Stir until well mixed.

3. Stir in the Parmesan cheese until smooth and fully combined.

4. Prepare the piping bag: Spoon the ricotta filling into a large freezer bag, filling it halfway.

5. Press out the air and seal the bag.

6. Snip off a corner of the bag (about ¼ to ½ inch) to create a piping tip.

7. Fill your pasta shells, manicotti, or ravioli by gently squeezing the filling into each piece.

 

Savory Meat Sauce

 

Ingredients:

1 lb ground beef and pork mixture (Good Ranchers recommended)

1 medium onion, diced

2 garlic cloves, chopped

1 tablespoon parsley (fresh or dried)

Salt and pepper to taste

½ teaspoon onion powder

28 oz tomato sauce

 

Instructions:

1. Heat a large skillet over medium heat. Add the ground beef and pork mixture. Brown the meat for about 5-7 minutes, breaking it up as it cooks.

2. Add the diced onion and garlic. Cook for 3-4 minutes until soft and fragrant.

3. Season with parsley, salt, pepper, and onion powder. Stir to combine and cook for another minute.

4. Pour in the tomato sauce and stir well. Bring to a gentle simmer.

5. Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.

6. Taste and adjust seasoning if needed.

 

Assembly & Bake

1. Preheat your oven to 375°F.

2. Place your filled pasta into a baking dish.

3. Pour the meat sauce generously over the pasta.
