
Wild Rice Chicken Salad – A Fresh, Protein-Packed Classic

There’s nothing better than a hearty, refreshing salad that’s packed with flavor, protein, and texture—and this Wild Rice Chicken Salad delivers all that and more. Made with tender Good Ranchers’ chicken breasts, nutty wild rice, crunchy cashews, crisp water chestnuts, and sweet green grapes, it’s the perfect combination of savory and sweet in every bite.
Ingredients:
- 4 Good Ranchers’ Chicken Breasts, cooked and diced
- 1 tbsp Olive Oil
- 1/3 cup Mayonnaise
- 1/8 tsp Salt
- 1/4 tsp Black Pepper
- 2 tbsp Lemon Juice
- 1 (8.8 oz) package Wild Rice
- 1 cup halved Cashews
- 1/4 cup Green Onions, chopped
- 1/2 tsp Dried Tarragon
- 1 (8 oz) can Sliced Water Chestnuts, drained & rinsed
- 1 cup halved Green Grapes
Instructions:
- Preheat oven to 350 degrees.
- Toss chicken with olive oil, salt, and pepper and place in a baking dish and cook in the preheated oven for 30 minutes or until cooked through.
- Once the chicken is done, allow it to cool and dice into bite sized pieces.
- Microwave the wild rice according to directions and set aside to cool.
- In a medium sized bowl, add the mayonnaise, salt, pepper, lemon juice, cashews, chopped green onion, tarragon, water chestnuts, wild rice, and diced chicken and mix all ingredients together.
- Chill in refrigerator for one hour before adding in the diced green grapes.
